Easy Thanksgiving Recipes – Soup And The Main Course

Let’s start with a yummy pumpkin soup that’s completely vegetarian.

Full Vegetarian Pumpkin Soup

If you love pumpkin, you’ll love this. There are lots of Thanksgiving dinner recipes with pumpkin as one of the ingredients. Halloween is gone, yet pumpkin is still all the rage in recipes.

You Need: A can (16 ounces) of pumpkin puree; 1 cup vegetable broth; 3 cups of soymilk; half teaspoon each of sugar and nutmeg; one tablespoon of margarine; one diced onion; and salt and pepper.

Do This:Take a big saucepan and cook the diced onion in margarine for 5 minutes. Add the other ingredients to it. Stir well. Cook the stuff over medium heat for 15 minutes. The soup is ready!

It’s time to move to the main course. There are a million easy Thanksgiving recipes that do not use meat. How about making a savory dish of risotto?

Squash Risotto With Cheese

It’s healthy and most people love eating it, just like other easy Thanksgiving recipes.

You Need:Winter squash, weighing 2-3 lbs; one minced onion and 2 minced garlic cloves; 1 ½ c Arborio rice; ¾ c parmesan cheese, 3 T melted butter; 1 T olive oil; ¾ c dry white wine; 1 T fresh and minced sage; 4 c vegetable stock; salt to taste.

Do This:Preheat the oven at a temperature of 450. While the oven is heating, take the squash. Cut in half; take out the seeds and strings in a separate bowl. Spread a thin layer of butter in the inside part of the squash. Sprinkle some salt. Place this squash on a cookie sheet with the flesh side up. For 45 minutes, bake the squash till it becomes soft. Set it aside for cooling. Thereafter, spoon the tender flesh in a bowl, throw away the skins, and mash the pulp until it turns into a smooth paste.

Now, take the seeds and strings and add the vegetable stock and half of a teaspoon of salt to it. Heat this on high until it boils. Cover the lid and let it simmer for 15-20 minutes on low. After this, strain the liquid of the bowl. Measure the strained liquid in a saucepan. Add water till the quantity gets equivalent to 5 cups. Again, simmer it for some time.

Now, take a heavy bottom saucepan and heat olive oil and butter until it melts and has no foam. Do not burn it. Sauté it with onion and garlic. Mix rice, stirring continuously, and cook for a minute. Add wine while cooking. Then add broth slowly as it gets absorbed. Do this until the rice gets tender and creamy. You can add more hot water to set the rice properly, if required.

Once the rice is ready, add the mashed squash, sage, parmesan cheese and butter to it. Mix well. You can add nutmeg and a little more salt, if you want. Serve hot. Sprinkle with more cheese for added taste and aroma.
