Slow Cooker Broccoli Potato Soup

I love soup! It’s cheap, easy to make, and nutritious too. If you puree the soup it will seem very creamy. This is from the potato, it’s a great trick. You can also mix in some sour cream to make it a rich treat, just use low fat. I don’t use fat free because they usually add more filler ingredients.

Slow Cooker Broccoli Potato Soup

  • 1 bag frozen broccoli (or 1 fresh head trimmed and chopped)
  • 3 large potatoes or 6 – 8 smallish ones, cubed
  • 1 onion, minced
  • 3 cloves garlic, minced
  • 4 cups filtered water
  • 1 Tb. each Fresh rosemary and thyme chopped (use only 1 teaspoons if dried!)
  • Salt and pepper to taste
  • Chives for garnish
  • Low fat sour cream, low fat shredded cheese, Bac-o’s Bacon Flavor Bits (optional)

Combine first six ingredients into a slow cooker, and cook on low 6 – 10 hours. Puree with an immersion blender or in a regular blender. If using a regular blender, make sure to do it in small batches. Being sprayed with hot soup is never a fun thing! Add more water if the soup is too thick for you.

Serve topped with chives, sour cream, and shredded cheese. Add Bac-o’s Bacon Flavor Bits if you want – they are vegan so they are not as bad as you think. Or you could add a couple of drops of liquid smoke to the soup pot to get the same flavor for no additional calories!
